MEDITERRANEAN DIET

Classified as a World and Intangible Heritage of Humanity by UNESCO in 2013, the Mediterranean Diet is linked to the way of being, culture and history of several countries and, among them are the Portuguese. It is defined by the use of natural products in its confection that, mixed and cooked properly, allows the tasting of delicious and special dishes. This diet is based on three main pillars: olive oil, vegetables and fruits.
This course provides an approach to the following themes: Historical Context of Mediterranean Cuisine; The most commonly used ingredients and traditional confectionary; The health benefits; Confectionery techniques and recipes; Confection and tasting of the dishes.
