Awareness of the healthy nourishment which has been increasing in our country and throughout the world, and eagerness to learn local and foreign flavors have caused a rapid change and improvement in the field of the food and beverage services and enabled it to become an employment area. To be able to keep pace with the competition conditions, qualified labor force which can provide a world-class service and qualifications demanded by the industry is required. We thought that different and extraordinary flavors have to be created in innovative and creative kitchens. And the sector gives a chance to the creativity and conveys the past to today through the traditions and roots by creating an intercultural bridge.
And thus, Molecular cuisine techniques and artisan bakery practices modernize traditional cuisine and enable it to rise to prominence with an innovative approach. Our project aimed participants to observe the different cuisine practices around the world, explore the changes, and improve new cooking techniques while creating awareness of professional skills. In addition, we intended to meet the sector’s lack of qualified personnel and to educate in practical terms entrepreneurial individuals who have creative qualifications and overconfidence, and who are able to think beyond the box. We believed that our project deliverables and application quality will meet the needs of the sector and surely will make a difference.
We have made various studies on this subject. We completed our domestic and international training and started our dissemination activities. These studies are still continuing and we are also continuing to work on student employment issues.
